Grown Up Grilled Cheese

National Grilled Cheese Day is probably my third favorite holiday after Christmas and the Fourth of July.  Nothing says comfort food like bread and cheese in sandwich form!  Sometimes, though, it’s nice to fancy up the classics.  In this sandwich, havarti cheese, prosciutto, apricot preserves, and peppery arugula on sourdough bread make for a decadent and delicious grilled cheese that will put your after school American cheese sammie to shame.  It’s time to step it up and make a Grown Up Grilled Cheese!

Sourdough Bread

The real secret is a little smear of mayonnaise on the outside of your bread.  Mayo gives the bread that golden crispy outside when hits the pan.  The other secret is to keep your griddle on medium and give the toast some time .  If you turn it up too high, the cheese won’t melt before the bread starts to burn, and no one likes a burnt grilled cheese!

Some of my other favorite grilled cheese combos include:

  • BLTAGC: Bacon, Lettuce, Tomato, Avocado Grilled Cheese
  • BBQ Pork, Pickles and Cheddar with leftover shredded pork
  • Mozzarella, Tomato, and Fresh Basil
  • Sliced Ham, Swiss, and Spicy Brown Mustard
  • Goat Cheese, Honey, and Thyme

Basically you can’t go wrong when your main ingredients are bread and cheese…  How are you celebrating this time honored holiday??  I hope it involves and griddle and some creativity!
